Mediterranean Chicken | #MeddySteadyCook Cruise Competition

Some of you may know that cooking has never been my strong point, and living on my own means that I can rarely be bothered to whip up something more advanced than t a couple of Weeabix for my dinner. However, I was recently contacted by Bolsover Cruise Club* and told about their #MeddySteadyCook competition, which involves the chance to win a 2-night cruise just by uploading a Mediterranean recipe. For some reason, a cruise has always been on my bucket list (I think it harks back to my obsession with Pirates of the Caribbean) and so I was NOT passing up the opportunity to enter the competition. And, y’know, practicing making something other than cereal did sound kind of appealing to.

Mediterranean Chicken Recipe

OLYMPUS DIGITAL CAMERAIngredients:

2 x chicken breasts
3 peppers (1 x green, 1 x red, 1 x orange)
1 onion
Cherry tomatoes
Mozzarella (I would’ve preferred non-grated but the STUPID shop only had grated. At least I didn’t have to improvise with a Cheesestring though)

Method: 

  • Chop up half of each of your peppers and half of the onion too. This is quite a boring task so maybe pop on Kanye’s new album to get you through.
  • Mix these chopped bits with some oil (I don’t know what oil I have; it’s definitely nothing fancy though) and put them in an oven-proof dish of some kind
  • Pop these in the oven on their own for 10 minutes on 200 degrees
  • While they’re in there softening, brown your chicken breasts in a pan
  • Next, season your chicken with salt and pepper and then cut some slits in the chicken and ram some mozzarella in there
  • Take the dish out of the oven and place the chicken breasts delicately on the bed of peppers and onions (oh yes, you’ve now created a ‘bed’ of something. Move over Ainsley)
  • Half a load of the cherry tomatoes and scatter these over the dish
  • Sprinkle more mozzarella over everything, because cheese = life
  • Cook for 30-40 minutes on 200 degrees

OLYMPUS DIGITAL CAMERAI served my Mediterranean chicken with sweet potato fries, but you could always opt for a salad if you wanted to be healthy, or a load more chips if you didn’t. I was very pleasantly surprised to find that it actually tasted QUITE NICE. Which honestly, for a girl who has had to bin quite a few dinners because halfway through I’ve realised they taste like crap is good going.
